Saffron harvesting is best described as time-consuming. To produce a single kilogramme of Kashmiri saffron, farmers must pluck nearly 500,000 flower stigmas, and to pluck that many stigmas (all by hand), at least 150,000 flowers are required. During the harvest season, over 15,000 families whose livelihood is dependent on the crop work hard to remove the stigmas from the flowers.
