Carotenoids are natural lipid-soluble pigments produced exclusively by phytoplankton, algae, plants, and a small number of fungi and bacteria. In nature, carotenoids provide a wide variety of colors, most notably in the yellow and red colors of fruits, vegetables, and leaves. Due to the fact that the human body is unable to synthesize carotenoids, they are widely used in nutraceuticals and the food & beverage industry.
