5 cups water, divided

1 cup light rum

Directions

In a pan, add sugar, 1 cup water and grated lemon zest. Cook till the sugar dissolves on medium heat. Turn this off and add lemon juice and remaining water. Pour this into a pitcher and let it chill.

Just before serving, stir in rum. Serve with lemon slices as garnish.

1-1/2 cups light rum

Ice cubes

7 cups club soda, chilled

For the garnish

Fresh pineapple slices and additional fresh mint leaves
